Apple Roasted Chicken
1 whole chicken (3-4 lbs)
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 lemon, halved
1 small onion, quartered
4 cloves garlic, smashed
Preheat oven to 425°F (220°C). Remove giblets and rinse the chicken inside and out. Pat dry with paper towels.
In a small bowl, mix together olive oil, spice blend, salt, and pepper.
Rub the spice mixture all over the chicken, including under the skin and inside the cavity.
Stuff the cavity with lemon halves, onion quarters, and garlic cloves.
Place chicken on a roasting rack set in a roasting pan, breast side up. Roast for 50-60 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
Remove from oven and let rest for 10 minutes before carving. Serve and enjoy!
