Imperial Adobo contains garlic, onion, cumin, coriander, black pepper, and paprika. A brief bloom in warm oil awakens the aromatic oils in the spices, creating deeper flavor throughout the fritters while preserving the sweetness of the corn.

Ingredients
For the Fritters
2 cups fresh corn kernels (330 g)
1 cup all-purpose flour (102 g)
1 teaspoon baking powder (4 g)
2 large eggs, beaten
1/4 cup milk (60 ml)
1/2 cup scallions, finely sliced (50 g)
1 1/2 teaspoons Imperial Adobo Seasoning (4 g)
1 tablespoon vegetable oil (15 ml)
For Frying
1/2 cup vegetable oil (120 ml)
For Serving
Sour cream
Fresh salsa
Method
In a small skillet, warm 1 tablespoon vegetable oil over low heat.
Add the Imperial Adobo seasoning and bloom for 30 seconds, stirring constantly. Remove from heat and cool slightly.
In a large mixing bowl, combine corn, flour, baking powder, eggs, milk, and scallions.
Stir in the bloomed seasoning mixture until evenly distributed.
Heat 1/2 inch vegetable oil in a heavy skillet over medium heat until it reaches approximately 350°F (175°C).
Drop heaping tablespoons of batter into the hot oil and gently flatten each fritter.
Fry for 2 to 3 minutes per side until golden brown and crisp.
Transfer to a paper towel-lined plate.
Serve immediately with sour cream and salsa.
If Something Goes Wrong
Fritters Fall Apart
The batter may be too wet. Add 1 to 2 tablespoons flour and mix gently.
Fritters Brown Too Quickly
Reduce the heat slightly. The oil is too hot.
Fritters Are Dense
Avoid overmixing. Stir only until the ingredients are combined.
Corn Flavor Gets Lost
Use fresh summer corn whenever possible. Frozen corn should be thoroughly drained before use.
