
No. 66 Jack Jack Smoky Breakfast Potatoes
INGREDIENTS
1 ½ lbs Potatoes peeled or washed, diced into small pieces
Olive Oil for frying
1 Onion medium, white or yellow; peeled, halved, and thinly sliced
1 Tab of Jack Jack No.66
INSTRUCTIONS
Fill a large pot with water, enough to cover the potatoes.
Bring it to a boil over high heat. Add the potatoes, & boil
for about 8-12 minutes, until potatoes are fork-tender.
Drain thoroughly and set aside. Add olive oil over medium
heat in a large, cast iron pan. Once the pan is hot, add
the onions. Cook the onions until they are beginning to
brown. When done transfer them to a bowl. Add a thin
layer of olive oil to the same pan used for the onions,
and heat it over medium-high heat. Add the par-boiled
potatoes. Cook the potatoes, until brown, about 5-7
minutes. Add Jack Jack Spice Blend along with ¼ cup
of water to the pan with the potatoes, and stir to coat.
Add the onions back into the pan and stir to combine.
