Recipe Card #1: Harvest Moon Roasted Chicken
Ingredients:
1 whole chicken (about 4 lbs), cleaned and patted dry
2 tablespoons Harvest Moon Seasoning
3 tablespoons olive oil
Juice from 1 fresh lemon
Lemon slices and fresh thyme for garnish (optional)
Instructions:
Preheat oven to 400°F (200°C).
In a small bowl, whisk Harvest Moon seasoning, olive oil, and fresh lemon juice.
Generously rub mixture all over the chicken, including inside the cavity.
Place chicken in a roasting pan or cast-iron skillet. If desired, add lemon slices and fresh thyme sprigs inside the chicken cavity.
Roast chicken for approximately 75-90 minutes, or until internal temperature reaches 165°F (74°C).
Allow chicken to rest for 10 minutes before carving.
Garnish with lemon slices and fresh thyme. Serve warm.
Recipe Card #2: Harvest Moon Roasted Vegetable Medley
Ingredients:
1 lb Brussels sprouts, halved
2 large sweet potatoes, peeled and diced
3 medium carrots, peeled and cut into chunks
1 red onion, cut into wedges
2 tablespoons olive oil
1½ tablespoons Harvest Moon Seasoning
Fresh parsley (optional)
Instructions:
Preheat oven to 425°F (220°C).
Place vegetables in a large mixing bowl. Drizzle with olive oil and sprinkle Harvest Moon seasoning. Toss until vegetables are evenly coated.
Spread vegetables in a single layer on a baking sheet lined with parchment paper.
Roast vegetables for 30-40 minutes, stirring halfway through, until caramelized and tender.
Garnish with freshly chopped parsley. Serve immediately.
Recipe Card #3: Harvest Moon Grilled Salmon
Ingredients:
4 salmon fillets (about 6 oz each)
1½ tablespoons Harvest Moon Seasoning
2 tablespoons olive oil
Juice from 1 lemon
Lemon wedges and parsley sprigs for garnish (optional)
Instructions:
Preheat grill or grill pan to medium-high heat.
In a bowl, whisk together Harvest Moon seasoning, olive oil, and lemon juice.
Brush mixture generously over both sides of salmon fillets.
Grill salmon for about 4-5 minutes per side, until cooked through and flakes easily with a fork.
Serve hot, garnished with lemon wedges and fresh parsley.
