Merit’s Pantry began with an extraordinary discovery: an intact 18th-Dynasty tomb belonging to Kha and his wife, Merit, preserved foodstuffs and aromatics from their world for more than three thousand years.

 

Among them were ingredients still familiar to us today.

 

What those ingredients became in the hands of an ancient Egyptian cook is another question entirely.

 

Merit’s Pantry is our modern culinary interpretation of that mystery.

Built around onion, garlic, coriander, cumin, nigella, and salt, the blend is warm, savory, aromatic, and earthy, with a gentle nuttiness and enough brightness to keep it remarkably versatile.

It is not a reconstruction of an ancient recipe, nor do we claim it is something Merit herself cooked. Instead, it is an invitation to explore an idea at the heart of everything we do at Oak City Spice Blends:

The ingredient is not the flavor. What you do with it matters.

 

Flavor Profile

Warm Merit’s Pantry briefly in olive oil before adding the remaining ingredients to your dish. Keep the heat gentle and stop when the aroma noticeably rises. You are looking for aromatic transformation, not browning.

The Story Behind the Blend

Thirty-five hundred years ago, Egyptian cooks had aromatics, fats, heat, cooking vessels, and tools for crushing and grinding.

They had the tools to transform flavor.

But what did they actually do with them?

 

That question took us from an extraordinary tomb at Deir el-Medina to surviving ancient bread, archaeobotany, experimental archaeology, and finally back into our own kitchens.

Her cumin still smells like cumin. It still isn’t telling.
