Here is a recipe card for a simple and flavorful roasted chicken using the Herbs de Provence spice blend:
Herbs de Provence Roasted Chicken Recipe
- 1 whole chicken, about 3-4 lbs
- 1 tablespoon Herbs de Provence
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 lemon, sliced
- Fresh thyme or rosemary, chopped for garnish
Preheat the oven to 425°F.
In a small bowl, mix the Herbs de Provence, salt, and black pepper together.
Place the chicken in a roasting pan. Rub the chicken with the spice mixture, making sure to coat it evenly on all sides.
In a separate bowl, mix the olive oil and minced garlic. Rub the garlic mixture over the chicken, making sure to get it under the skin as well.
Place the sliced lemon on top of the chicken.
Roast the chicken in the preheated oven for 50-60 minutes or until the internal temperature of the chicken reaches 165°F.
Let the chicken rest for 10 minutes before carving.
Serve the chicken on a platter, garnished with fresh thyme or rosemary.
