Here is a recipe card for a simple and flavorful roasted chicken using the Herbs de Provence spice blend:

 

Herbs de Provence Roasted Chicken Recipe

Ingredients:

  • 1 whole chicken, about 3-4 lbs
  • 1 tablespoon Herbs de Provence
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • Fresh thyme or rosemary, chopped for garnish

Instructions:

  • Preheat the oven to 425°F.

  • In a small bowl, mix the Herbs de Provence, salt, and black pepper together.

  • Place the chicken in a roasting pan. Rub the chicken with the spice mixture, making sure to coat it evenly on all sides.

  • In a separate bowl, mix the olive oil and minced garlic. Rub the garlic mixture over the chicken, making sure to get it under the skin as well.

  • Place the sliced lemon on top of the chicken.

  • Roast the chicken in the preheated oven for 50-60 minutes or until the internal temperature of the chicken reaches 165°F.

  • Let the chicken rest for 10 minutes before carving.

  • Serve the chicken on a platter, garnished with fresh thyme or rosemary.
