Barazki Zopa Vegetable Soup Recipe:

Ingredients:

2 tbsp. olive oil

1 onion, chopped

2 cloves garlic, minced

2 carrots, chopped

2 celery stalks, chopped

1 zucchini, chopped

1 yellow squash, chopped

1 red bell pepper, chopped

1 can diced tomatoes

4 cups vegetable broth

2 tbsp. "Barazki Zopa" spice blend

Salt, to taste

Fresh parsley, chopped, for garnish

Directions:

  1. Heat the olive oil in a large pot over medium-high heat.

  2. Add the onion and garlic and cook until softened, about 2-3 minutes.

  3. Add the carrots, celery, zucchini, yellow squash, and red bell pepper and cook for 5-7 minutes, or until the vegetables are tender.

  4. Add the diced tomatoes, vegetable broth, "Barazki Zopa" spice blend, and salt to the pot and stir to combine.

  5. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes.

  6. Serve hot, garnished with fresh parsley.
