Crispy French Fries with Peanut Oil and "Sel de Fleur de Feu"
Ingredients:
* Russet potatoes, peeled and cut into sticks: 2 pounds
* Peanut oil: sufficient for deep frying
* "Sel de Fleur de Feu": 2 teaspoons
* Fresh parsley, finely chopped (optional, for garnish): 2 tablespoons
Instructions:
1. Prepare Potatoes: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and dry thoroughly.
2. Heat Oil: Heat the peanut oil in a deep fryer or large pot to 375°F (190°C).
3. Fry Potatoes: Fry the potatoes in batches. First, fry each batch for about 3 minutes, remove and drain (they should be pale), then let them rest for a few minutes. Fry again for another 3-4 minutes or until golden and crisp.
4. Season: Toss the hot fries with "Sel de Fleur de Feu" immediately after the second fry.
5. Serve: Serve the fries hot, garnished with fresh parsley if desired
