Smoky Mountain Breakfast Burritos
1 tbsp Smoky Mountain spice blend
8 large eggs
1/4 cup milk
Salt and black pepper, to taste
2 tbsp olive oil
1 small onion, chopped
1 cup mushrooms
1 cup shredded cheddar cheese
8 large flour tortillas
Salsa, sour cream, lime, and fresh cilantro (optional, for serving)
In a bowl, whisk eggs, milk, Smoky Mountain spice blend, salt, and pepper. Set aside.
In a large skillet, heat olive oil over medium heat. Add onion and mushrooms, sauté until softened, about 5 minutes.
Pour egg mixture into the skillet and scramble until cooked through.
Stir in black beans and cook for an additional 2 minutes.
Warm tortillas in the microwave or on the stovetop.
Divide egg mixture and cheese among tortillas, and fold to close.
Serve with salsa, sour cream, and cilantro, if desired.
