Breakfast Burritos - Smoky Mountain

Smoky Mountain Breakfast Burritos

  • 8 large eggs

  • 1/4 cup milk

  • Salt and black pepper, to taste

  • 2 tbsp olive oil

  • 1 small onion, chopped

  • 1 cup mushrooms

  • 1 cup shredded cheddar cheese

  • 8 large flour tortillas

  • Salsa, sour cream, lime, and fresh cilantro (optional, for serving)

  1. In a bowl, whisk eggs, milk, Smoky Mountain spice blend, salt, and pepper. Set aside.

  2. In a large skillet, heat olive oil over medium heat. Add onion and mushrooms, sauté until softened, about 5 minutes.

  3. Pour egg mixture into the skillet and scramble until cooked through.

  4. Stir in black beans and cook for an additional 2 minutes.

  5. Warm tortillas in the microwave or on the stovetop.

  6. Divide egg mixture and cheese among tortillas, and fold to close.

  7. Serve with salsa, sour cream, and cilantro, if desired.
