Cheesy Mashed Potato Fries with Uppity Chicken Seasoning

A crispy, cheesy twist on fries made with mashed potatoes and Uppity Chicken Seasoning for extra flavor!


Ingredients:

  • 2 cups mashed potatoes (cooled, preferably from russet potatoes)

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • ½ cup cornstarch (plus extra for dusting)

  • 1 teaspoon Uppity Chicken Seasoning (from Oak City Spice Blends)

  • Oil for frying (vegetable or canola)


Instructions:

  1. Prepare the Dough:

    • In a large bowl, mix mashed potatoes (ensure there are no lumps, or you will have a difficult time rolling out the fries), shredded cheese, cornstarch, and Uppity Chicken Seasoning.

    • Stir until a smooth, pliable dough forms.

  2. Shape the Fries:

    • Lightly dust a clean surface with cornstarch.

    • Roll out the dough to about ½-inch thick.

    • Cut into fry-sized strips, about ½-inch wide and 3-4 inches long.

  3. Chill the Fries:

    • Place the fries on a tray and refrigerate for at least 20 minutes (or freeze for 10 minutes) to firm up.

  4. Fry the Fries:

    • Heat about 2 inches of oil in a pan to 350°F (175°C).

    • Fry the fries in batches for 2-3 minutes per side, or until golden brown and crispy.

    • Remove and drain on paper towels.

  5. Serve & Enjoy:

    1. Serve hot with your favorite dipping sauce!


Baking or Air Fryer Alternative:

  1. Bake: Place on a parchment-lined baking sheet, brush with oil, and bake at 400°F (200°C) for 20-25 minutes, flipping halfway.

  2. Air Fry: Air fry at 375°F (190°C) for 12-15 minutes, shaking halfway.
