A crispy, cheesy twist on fries made with mashed potatoes and Uppity Chicken Seasoning for extra flavor!
Ingredients:
2 cups mashed potatoes (cooled, preferably from russet potatoes)
1 cup shredded cheese (cheddar, mozzarella, or a mix)
½ cup cornstarch (plus extra for dusting)
1 teaspoon Uppity Chicken Seasoning (from Oak City Spice Blends)
Oil for frying (vegetable or canola)
Instructions:
Prepare the Dough:
In a large bowl, mix mashed potatoes (ensure there are no lumps, or you will have a difficult time rolling out the fries), shredded cheese, cornstarch, and Uppity Chicken Seasoning.
Stir until a smooth, pliable dough forms.
Shape the Fries:
Lightly dust a clean surface with cornstarch.
Roll out the dough to about ½-inch thick.
Cut into fry-sized strips, about ½-inch wide and 3-4 inches long.
Chill the Fries:
Place the fries on a tray and refrigerate for at least 20 minutes (or freeze for 10 minutes) to firm up.
Fry the Fries:
Heat about 2 inches of oil in a pan to 350°F (175°C).
Fry the fries in batches for 2-3 minutes per side, or until golden brown and crispy.
Remove and drain on paper towels.
Serve & Enjoy:
Serve hot with your favorite dipping sauce!
Baking or Air Fryer Alternative:
Bake: Place on a parchment-lined baking sheet, brush with oil, and bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
Air Fry: Air fry at 375°F (190°C) for 12-15 minutes, shaking halfway.
