Chicken Enchiladas with Taco Tuesday

Ingredients (Serves 6)

  • 3 cups cooked chicken, shredded

  • 1 tablespoon Oak City Taco Tuesday Seasoning

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (4 oz) diced green chiles

  • 2 cups enchilada sauce (red or green)

  • 8 flour or corn tortillas (6-inch)

  • 2 cups shredded cheese (Cheddar/Jack blend or Oaxaca)

  • ½ cup sour cream or Mexican crema

  • ¼ cup fresh cilantro, chopped

  • Optional garnish: avocado, pickled jalapeños, lime wedges

Instructions

  1. Make the filling

    • In a skillet, sauté onions and garlic until soft.

    • Add chicken, green chiles, and Taco Tuesday seasoning.

    • Stir in ½ cup enchilada sauce to bring it together.

  2. Assemble

    • Preheat oven to 375°F.

    • Warm tortillas so they don’t tear.

    • Spoon filling into each tortilla, add a bit of cheese, roll, and place seam-side down in a 9x13 dish.

  3. Top & Bake

    • Pour the remaining enchilada sauce over the rolled tortillas.

    • Sprinkle with the rest of the cheese.

    • Cover with foil and bake 20 minutes, then uncover and bake another 10 until bubbly.

  4. Serve

    • Garnish with sour cream, cilantro, avocado, or jalapeños.

    • Enjoy with rice and beans or a crisp salad.
