Chicken Enchiladas with Taco Tuesday

Ingredients (Serves 6)
3 cups cooked chicken, shredded
1 tablespoon Oak City Taco Tuesday Seasoning
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (4 oz) diced green chiles
2 cups enchilada sauce (red or green)
8 flour or corn tortillas (6-inch)
2 cups shredded cheese (Cheddar/Jack blend or Oaxaca)
½ cup sour cream or Mexican crema
¼ cup fresh cilantro, chopped
Optional garnish: avocado, pickled jalapeños, lime wedges
Instructions
Make the filling
In a skillet, sauté onions and garlic until soft.
Add chicken, green chiles, and Taco Tuesday seasoning.
Stir in ½ cup enchilada sauce to bring it together.
Assemble
Preheat oven to 375°F.
Warm tortillas so they don’t tear.
Spoon filling into each tortilla, add a bit of cheese, roll, and place seam-side down in a 9x13 dish.
Top & Bake
Pour the remaining enchilada sauce over the rolled tortillas.
Sprinkle with the rest of the cheese.
Cover with foil and bake 20 minutes, then uncover and bake another 10 until bubbly.
Serve
Garnish with sour cream, cilantro, avocado, or jalapeños.
Enjoy with rice and beans or a crisp salad.
