Serves 4
Ingredients
For the Quesadillas
2 cups cooked chicken breast, shredded
1 tablespoon Tick Tick Boom seasoning
1 tablespoon olive oil
4 large flour tortillas
2 cups shredded Mexican cheese blend or cheddar
2 tablespoons butter
Optional: salsa, sour cream, guacamole for serving
Instructions
1. Season the Chicken
Heat olive oil in a skillet over medium heat. Add shredded chicken and sprinkle with Tick Tick Boom seasoning.
Stir well and cook for 3–4 minutes, until the chicken is warmed through and fully coated in the spice. Remove from heat and set aside.
2. Assemble the Quesadillas
Heat a clean skillet or griddle over medium heat. Add a small amount of butter and allow it to melt.
Place one tortilla into the pan.Sprinkle ½ cup cheese evenly over the surface.Add ¼ of the seasoned chicken.Top with another ¼ cup cheese.
Place a second tortilla on top and press gently.
Cook 2–3 minutes per side until golden brown and crisp, and the cheese is fully melted.
Repeat with remaining tortillas.
Let rest 1 minute before slicing into wedges.
Spiced Queso

Ingredients
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup whole milk
1 ½ cups shredded cheddar
1 teaspoon Tick Tick Boom seasoning
1 small jalapeño, finely chopped (optional)
Salt to taste
Instructions
Melt butter in a small saucepan over medium heat.
Whisk in flour and cook 1–2 minutes to form a light roux.
Slowly whisk in milk, stirring constantly until smooth and slightly thickened (about 3–4 minutes).
Add cheddar and Tick Tick Boom seasoning. Stir until fully melted and silky.
If using jalapeño, stir it in now. Taste and adjust salt as needed.
Serve warm alongside the quesadillas.
