A crispy, savory, bacon-kissed side dish with bold flavor from Oak City’s Cowboy Crunch.
Ingredients
1 medium potato, parboiled and diced
2–3 strips bacon, chopped
½ cup shredded cheese (cheddar & Colby blend)
1 tsp Cowboy Crunch seasoning (from Oak City Spice Blends)
Instructions
Prep the Potato
Parboil the potato until just tender (about 10 minutes), then dice into small cubes.
Fry the Bacon
In a skillet over medium heat, cook chopped bacon until crispy. Leave the bacon in the pan and keep the rendered fat.
Cook the Potatoes
Add diced potatoes directly into the skillet with the bacon and fat. Spread into a single layer for maximum crisp.
Add the Cheese & Cowboy Crunch
In a small bowl, toss shredded cheese with Cowboy Crunch. Sprinkle the mixture evenly over the potatoes.
Let It Work Its Magic
Cover and cook on medium-low for about 20 minutes, or until the bottom of the potatoes are crispy and the cheese is fully melted and golden.
Serve Hot
Spoon it up and serve warm—perfect for breakfast, brunch, or a bold side dish.
