Fire Island Spam Fried Rice

Servings: 4 Prep Time: 10 minutes Cook Time: 15 minutes

Ingredients:

  • 1 can Spam, diced

  • 2 tbsp Fire Island seasoning

  • 2 tbsp vegetable oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 cup frozen peas and carrots, thawed

  • 4 cups cooked jasmine rice, cooled

  • 2 tbsp soy sauce

  • 2 eggs, lightly beaten

  • 2 green onions, sliced

  • 1 tbsp sesame oil (optional)

Instructions:

  1. Cook the Spam: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced Spam and cook until browned and crispy, about 5 minutes. Remove from the skillet and set aside.

  2. Sauté the Vegetables: In the same skillet, add the onion and garlic. Cook for 2-3 minutes until fragrant. Add the peas and carrots, cooking until heated through.

  3. Fry the Rice: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Sprinkle the Fire Island seasoning over the rice and stir to combine. Cook for 3-4 minutes, allowing the rice to get slightly crispy.

  4. Mix in the Eggs and Spam: Push the rice to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked. Mix the scrambled eggs into the rice, along with the cooked Spam. Stir in the soy sauce.

  5. Finish and Serve: Drizzle with sesame oil if desired, and garnish with sliced green onions. Serve hot.
