Fluffy Cowboy Crunch Omelette

Light as air with a bold, smoky kick

Ingredients (Serves 1):

  • 2 large eggs, separated

  • 1 pinch Cowboy Crunch seasoning from Oak City Spice Blends

  • 1 tablespoon queso cheese

  • 1 teaspoon neutral oil (like avocado or sunflower)


Instructions:

  1. Separate the eggs. Place the whites in a clean bowl and the yolks in another.

  2. Whip the egg whites until stiff peaks form—this creates the signature fluffy texture of the omelette.

  3. Gently fold in the egg yolks and Cowboy Crunch seasoning, being careful not to deflate the whites.

  4. Heat a nonstick skillet over medium heat and add a teaspoon of oil. Swirl to coat the pan evenly.

  5. Pour in the egg mixture. Let it cook undisturbed for 2–3 minutes until the bottom is set and lightly golden.

  6. Add the queso cheese on one half (or spread over the top if preferred) and gently fold the omelette in half.

  7. Cook another 30–60 seconds, just to melt the cheese slightly. Slide onto a plate and serve immediately.


Chef’s Tip: For extra richness, you can butter the pan instead of using oil. Serve with fresh herbs or toast on the side.
