🌿 Fluffy Za’atar: A Journey Through Time

Ancient Times (1000 BCE – 1st c. CE)
Biblical herb — Mentioned as “hyssop” in Hebrew texts, used in purification rituals and cooking.
Ancient Egyptians, Greeks, and Romans prized related herbs for flavor and medicine.
Sesame seeds already valued as an energy-rich staple.
Medieval Era (7th – 15th c.)
In the Islamic Golden Age, physicians like Ibn al-Baytar praised za’atar for aiding digestion and memory.
Eaten with bread, olive oil, and cheese in simple meals.
Sumac widely used in medieval kitchens for its sour tang — a stand-in for citrus before lemons became common.
Ottoman Period (16th – 19th c.)
The za’atar blend takes shape:Herb (za’atar) + sesame + sumac + salt.

3 tbsp tahini
2 tbsp lemon juice
2 tbsp olive oil, plus more for drizzling
2 cloves garlic, minced
½ tsp sea salt
2 tsp Fluffy Za’atar
Instructions:
In a food processor, blend chickpeas, tahini, lemon juice, olive oil, garlic, and salt until smooth.
Add 2 tbsp water (or more) for a lighter texture.

1 tsp Fluffy Za’atar
Instructions:
Heat olive oil in a non-stick skillet over medium heat.

Slide onto a plate, sprinkle with feta, and dust with Fluffy Za’atar.

Ingredients:
2 cups chopped carrots
2 cups chopped zucchini

3 tbsp olive oil

Toss vegetables with olive oil, salt, and Fluffy Za’atar.
