La Spezia Italian Scrambled Eggs

Ingredients

  • 3 large eggs

  • 1/2 cup mushrooms, sliced

  • 1/3 cup mozzarella cheese, shredded

  • 1/2–1 tsp Oak City Spice Blends La Spezia seasoning (to taste)

  • 1 tbsp olive oil or butter

  • Salt and pepper, to taste

  • Optional: Fresh basil or parsley for garnish


Instructions

  1. Sauté Mushrooms: Heat olive oil or butter in a nonstick skillet over medium heat. Add sliced mushrooms and sauté until golden brown and tender, about 3–4 minutes.

  2. Prepare Eggs: In a bowl, whisk eggs with La Spezia seasoning, plus a pinch of salt and pepper.

  3. Scramble Eggs: Pour the egg mixture over the mushrooms in the skillet. Let the eggs set for a moment, then gently stir with a spatula, pushing the eggs from the edges to the center until softly set.

  4. Add Cheese: Sprinkle mozzarella over the eggs. Let melt for a minute, then fold into the scramble.

  5. Serve: Slide eggs onto a plate and garnish with fresh basil or parsley if desired. Enjoy immediately, ideally with good bread and a little Italian daydreaming.
