Lemon & Chai Pie Wallah Cake




Ingredients:

  • 2 cups cake flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp Oak City Spice Blends Chai Pie Wallah seasoning

  • 1 cup (2 sticks) unsalted butter, room temperature

  • 1 1/4 cups sugar

  • Zest of 2 lemons

  • 3 large eggs, room temperature

  • 1/2 cup sour cream

  • 1/4 cup fresh lemon juice

  • 1 tsp vanilla extract

Instructions:

  1. Prep:Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or loaf pan.

  2. Mix Dry Ingredients:In a medium bowl, sift together cake flour, baking powder, baking soda, salt, and Chai Pie Wallah seasoning.

  3. Cream Butter & Sugar:In a large bowl, beat butter, sugar, and lemon zest until light and fluffy (about 3 minutes).

  4. Add Eggs:Add eggs, one at a time, beating well after each addition. Mix in vanilla.

  5. Add Sour Cream & Lemon Juice:Mix in the sour cream and lemon juice until just combined.

  6. Combine Wet & Dry:Add dry ingredients to wet, mixing on low speed until just combined. Do not overmix.

  7. Bake:Pour batter into prepared pan. Bake 40–50 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool:Let cake cool in pan 15 minutes, then transfer to a wire rack.

Optional Glaze: Mix 1 cup powdered sugar with 2–3 Tbsp fresh lemon juice and drizzle over cooled cake.

Tips:

  • For extra chai flavor, sprinkle a pinch of Chai Pie Wallah over the glaze.

  • Pairs beautifully with tea or coffee.

Cake issues?

Why do cakes crack down the middle? This usually means your oven temperature is running hot or uneven. Make sure to check with an oven thermometer and always bake in the center of your oven.


Why did my cake overflow? Usually, it’s one of three things: too much baking powder, too little flour, or filling the pan more than 2/3 full. Stick to the recipe and measure carefully!


Why does a cake rise in the oven and then cave in when cooling? This is often from overfilling the pan or whipping egg whites when the recipe doesn’t call for it. Resist the urge to “improve” the process—trust the method!


Why is my cake shiny and sticky on top? That’s from under-mixing, baking too slowly, or an oven that isn’t heating evenly. Try to mix thoroughly and bake at the right temperature for your pan size.
