Lu Bao Roast Chicken

Succulent, aromatic chicken perfect for any weeknight dinner or special occasion.

Ingredients (4 servings)

  • 4 chicken thighs (bone-in, skin on) or 4 chicken breasts (boneless)

  • 2 tablespoons olive oil (plus extra for the pan)

  • 1 tablespoon Lu Bao Seasoning

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper (optional)

  • Juice from half a lemon (optional)

Instructions

  1. Preheat the Oven: Set the oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with foil.

  2. Season the Chicken: In a small bowl, combine the olive oil, Lu Bao Seasoning, salt, and black pepper. Rub this mixture all over the chicken pieces.

  3. Arrange & Roast: Place the chicken in the prepared dish or pan, skin side up if using bone-in cuts. Roast for approximately 25–30 minutes for boneless breasts (or 35–40 minutes for bone-in thighs), until the internal temperature reaches 165°F (74°C).

  4. Add Lemon Zest (Optional): Squeeze lemon juice over the chicken in the last 5 minutes of roasting for a bright, fresh flavor.

  5. Rest & Serve: Let the chicken rest for 5 minutes before serving. Pair with roasted vegetables, mashed potatoes, or a fresh salad.
