2 large White Potatoes, peeled and cut into small cubes
1/4 cup Olive Oil
2 Garlic cloves, minced
1 teaspoon No. 44 Firecracker Spice Blend
Salt and pepper
Vegetable oil for frying
Boil the potatoes in a pot of salted water for 5-7 minutes, or until tender but not falling apart.
Drain the potatoes and pat dry with paper towels.
Heat the olive oil in a large skillet over medium heat.
Add the garlic, and No. 44 Firecracker Spice Blend to the skillet and cook for 1-2 minutes, or until fragrant.
Add the potatoes to the skillet and coat with the spice mixture.
Season the potatoes with salt and pepper to taste.
Heat the vegetable oil in a deep fryer or large pot to 375°F.
Fry the potato cubes in small batches for about 3-4 minutes, or until golden brown and crispy.
Remove with a slotted spoon and drain on paper towels.
Serve with aioli or your favorite hot dipping sauce.
