Pecan, Raisin, and Buttermilk Scones with Pumpkin Love Seasoning

Ingredients:

  • 2 cups all-purpose flour

  • 1/4 cup granulated sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes

  • 1/2 cup chopped pecans

  • 1/2 cup raisins

  • 3/4 cup buttermilk

  • 1 teaspoon vanilla extract

  • 1 tablespoon Oak City Spice Blends Pumpkin Love seasoning

  • 1 egg, lightly beaten (for egg wash)

  • 2 tablespoons coarse sugar (optional, for sprinkling on top)

Instructions:

  1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  1. Mix the Dry Ingredients:

  • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and 1 tablespoon of Oak City Spice Blends Pumpkin Love seasoning.

  1. Cut in the Butter:

  • Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

  1. Add Pecans and Raisins:

  • Stir in the chopped pecans and raisins until evenly distributed.

  1. Mix Wet Ingredients:

  • In a separate bowl, whisk together the buttermilk and vanilla extract.

  1. Combine Wet and Dry Ingredients:

  1. Prepare for Baking:

  • Place the scones on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with coarse sugar, if desired.

  1. Bake:

  • Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

  1. Cool and Serve:

  • Allow the scones to cool slightly on the baking sheet before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
