Pourde Douce Carrot Cake
1/2 C Sugar
3 Tablespoons Oil
1 C shredded Carrots
8 oz. Crushed Pineapple
1/3 C Orange Juice
1 1/2 C All-Purpose Flour
1 1/2 Teaspoons Baking Soda
1 Teaspoon No. 36 Pourde Douce Spice Blend
1/4 Teaspoon Salt
1/3 C Sugar
1/3 Finely Chopped Nuts
3/4 Teaspoon No. 36 Pourdre Douce Spice Blend
Preheat the oven to 350 degrees.
Put parchment paper in your 9-inch round cake pan.
In a medium bowl, combine sugar, egg, and oil. Mix Well.
Add carrots, pineapple, and orange juice. Mix Well.
Add in baking soda, salt, and No. 36 Pourdre Douce Spice Blend. Mix Well.
Add in flour. Mix to just blend.
Pour batter into cake pan.
Top with remaining sugar, No. 36 Pourdre Douce Spice Blend, and finely chopped nuts.
Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes.
