Roaring Twenties Roast Chicken - 1920's Social Hour Seasoning

  • 1 whole chicken (about 4-5 lbs)

  • 2 tbsp olive oil

  • 2 tbsp "1920s Social Hour Spice Blend"

  • 1 lemon, halved

  • 4 cloves garlic, smashed

  • Fresh herbs (like rosemary and thyme), optional

  • Preheat the oven to 375°F (190°C).

  • Prepare the Chicken: Pat the chicken dry with paper towels. Rub the outside and inside of the chicken with olive oil and then generously apply the "1920s Social Hour Spice Blend," ensuring it's evenly distributed.

  • Stuff the Chicken: Place the lemon halves and smashed garlic inside the chicken cavity. Add fresh herbs if desired.

  • Roast: Place the chicken in a roasting pan, and roast for about 1 hour and 20 minutes, or until the juices run clear and a thermometer inserted into the thickest part of the thigh reads 165°F (74°C).

  • Rest: Let the chicken rest for 10 minutes before carving. Serve warm.
