Roasted Eggplant

Ingredients

• 2 medium Eggplants, sliced into 1/2-inch rounds

• 1/4 cup Olive oil

• 2 tablespoons No. 42 Fluffy Za'atar spice blend

• Salt to taste

Instructions

1. Preheat oven to 400°F (200°C).

2. Brush eggplant slices with olive oil and sprinkle with No. 42 Fluffy Za'atar spice blend and salt.

3. Arrange eggplant slices on a lined baking sheet in a single layer.

4. Bake for 20-25 minutes, until tender and golden. Serve warm.
