2 lbs. baby potatoes, halved
2 tbsp. olive oil
1 tsp. Viking Salt spice blend
Fresh parsley, chopped
Preheat oven to 400°F.
Toss potatoes with olive oil and Viking Salt spice blend.
Arrange potatoes in a single layer on a baking sheet.
Roast for 30-35 minutes or until tender and golden brown.
Serve hot, garnished with fresh parsley.
