Saxon Potato Cake
2 large Potatoes, peeled and grated
2 cups All-Purpose Flour
1/2 cup granulated Sugar
1/2 cup Unsalted Butter, softened
2 Egg Yolks
1 teaspoon Vanilla Extract
1/4 teaspoon Sea Salt
1 teaspoon No. 25 16c France
1/2 cup chopped Walnuts
Powdered Sugar or Cocoa Powder for dusting
Preheat oven to 375°F (190°C).
In a large mixing bowl, cream together the softened butter and sugar.
Add potatoes, flour, egg yolks, vanilla, salt, and No. 25 16c France to the mixing bowl and mix until well combined.
Stir in the chopped walnuts.
Pour the mixture into a greased 9-inch pie dish.
Bake for 35-40 minutes, or until the pie is set
Cool the pie completely before dusting with powdered sugar.
