Simple Chicken & White Bean Chili Soup with Uppity Chicken Seasoning

Inspired by the classic flavors of Oak City Spice Blends’ Uppity Chicken seasoning, this recipe is perfect for busy nights or cozy weekends. Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 large carrots, peeled and sliced

  • 2 tablespoons Uppity Chicken Seasoning (Oak City Spice Blends)

  • 4 cups chicken broth

  • 2 cans (15 oz each) white beans, drained and rinsed

  • 4 cups fresh spinach, roughly chopped

  • Salt and pepper to taste

  • Lemon juice (optional)

Instructions:

  1. Sauté: Heat olive oil in a large pot over medium heat. Add onion and carrots. Cook, stirring occasionally, until the onion is soft (about 4 minutes).

  2. Add Chicken & Seasoning: Add chicken pieces and Uppity Chicken seasoning. Stir and cook until the chicken is lightly browned (about 5 minutes).

  3. Simmer: Pour in chicken broth and add white beans. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until carrots are tender and chicken is cooked through.

  4. Finish with Spinach: Stir in spinach and simmer just until wilted (2–3 minutes). Taste and season with salt, pepper, and a squeeze of lemon juice if you like.
