Ingredients:
1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon olive oil
1 medium onion, diced
2 large carrots, peeled and sliced
2 tablespoons Uppity Chicken Seasoning (Oak City Spice Blends)
4 cups chicken broth
2 cans (15 oz each) white beans, drained and rinsed
4 cups fresh spinach, roughly chopped
Salt and pepper to taste
Lemon juice (optional)
Instructions:
Sauté: Heat olive oil in a large pot over medium heat. Add onion and carrots. Cook, stirring occasionally, until the onion is soft (about 4 minutes).
Add Chicken & Seasoning: Add chicken pieces and Uppity Chicken seasoning. Stir and cook until the chicken is lightly browned (about 5 minutes).
Simmer: Pour in chicken broth and add white beans. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until carrots are tender and chicken is cooked through.
Finish with Spinach: Stir in spinach and simmer just until wilted (2–3 minutes). Taste and season with salt, pepper, and a squeeze of lemon juice if you like.
