Simple Masala Spiced Chickpea Curry


  • For the Curry:

  • 1 tablespoon vegetable oil

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 1 inch ginger, grated

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 can (14 oz) diced tomatoes

  • 1 can (14 oz) coconut milk

  • 3 tablespoons Vegetable Masala spice blend

  • Salt to taste

  • Fresh cilantro, for garnish

  • For Serving:

  • Cooked rice or naan bread


  1. Cook the Aromatics:

  • Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger. Cook, stirring frequently, until the onion is translucent and soft, about 5 minutes.

  1. Add Chickpeas and Spices:

  • Add the chickpeas and Vegetable Masala spice blend to the skillet. Stir well to coat the chickpeas in the spices. Cook for 2 minutes to allow the flavors to meld.

  1. Simmer the Curry:

  • Add the diced tomatoes with their juice and coconut milk. Stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Cook, stirring occasionally, for 15-20 minutes, or until the curry has thickened slightly. Season with salt to taste.

  1. Serve:

  • Garnish the curry with fresh cilantro. Serve hot over cooked rice or with naan bread on the side.
