3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
In another bowl, whisk together flour, baking powder, salt, and spice blend. Gradually add dry ingredients to the wet ingredients, mixing until combined.
Shape dough into 1-inch balls and place on the prepared baking sheet.
Bake for 8-10 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
