Spiced Rice Pilaf - Istanbul

Spiced Rice Pilaf

  • 1 1/2 cups basmati rice

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tsp Istanbul spice blend

  • 3 cups chicken or vegetable broth

  • Salt to taste

  • 1/4 cup slivered almonds, toasted

  • 1/4 cup chopped fresh parsley

Instructions:

  1. Rinse rice under cold water until the water runs clear. Drain well.

  2. In a large saucepan, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

  3. Stir in Istanbul spice blend and cook for 1 minute, or until fragrant.

  4. Add rice and stir to coat in the spice mixture. Pour in chicken or vegetable broth and bring to a boil.

  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.

  6. Fluff rice with a fork and stir in toasted almonds and parsley. Serve warm.
