Spiced Rice Pudding
1 cup uncooked white rice
2 cups water
4 cups whole milk
1/2 cup granulated sugar
1/2 tsp salt
1 tsp pure vanilla extract
1/2 cup raisins (optional)
In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until rice is tender.
In a separate saucepan, combine milk, sugar, salt, and spice blend. Heat over medium-low heat until hot but not boiling.
Gradually add the cooked rice to the milk mixture, stirring constantly to avoid lumps.
Cook for an additional 20-25 minutes, stirring frequently, until the mixture thickens.
