Spiced Rice Pudding - 1st Day of Autumn

Spiced Rice Pudding

  • 1 cup uncooked white rice

  • 2 cups water

  • 4 cups whole milk

  • 1/2 cup granulated sugar

  • 1/2 tsp salt

  • 1 tsp pure vanilla extract

  • 1/2 cup raisins (optional)


  1. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until rice is tender.

  2. In a separate saucepan, combine milk, sugar, salt, and spice blend. Heat over medium-low heat until hot but not boiling.

  3. Gradually add the cooked rice to the milk mixture, stirring constantly to avoid lumps.

  4. Cook for an additional 20-25 minutes, stirring frequently, until the mixture thickens.
