Spiced Roasted Pumpkin Seeds
2 cups raw pumpkin seeds, cleaned and dried
3 tbsp melted butter or olive oil
3 tbsp Island of Island of Montreal spice blend
Salt, to taste
Preheat oven to 325°F (163°C).
In a pan, heat melted butter or olive oil over medium heat, add the Island of Montreal spice blend, and bloom for 30-60 seconds, stirring constantly.
Remove from heat and let the bloomed spice mixture cool slightly.
In a bowl, toss pumpkin seeds with the bloomed spice mixture and salt.
Spread the seasoned pumpkin seeds in a single layer on a lined baking sheet.
Roast for 25-30 minutes, stirring occasionally, until golden brown and crispy. Let cool completely before serving.
