Greek No-Knead Focaccia Bread

Greek No-Knead Focaccia

  • 4 Cups All-Purpose Flour

  • 2 Teaspoons Salt

  • 2 ¼ Teaspoons Instant Yeast

  • 2 Cups Warm Water

  • 1 Teaspoon Soft Butter for greasing pan

  • 4 Tablespoons Olive Oil

  • ½ Teaspoon of No. 12 Greek Spice Blend


  1. In a medium bowl combine flour, salt, and yeast. Stir well. Add warm water. Mix well. Cover the bowl with plastic wrap and refrigerate for at least 8 hours.

  2. Lightly butter 2 cake pans. Line with parchment (DO THIS). Pour 1 tablespoon of olive oil into the center of the parchment. Divide the dough in half and place in the pan. Turn it over to coat it with the oil, then cover it with plastic wrap and let it sit for at least 2 hours.

  3. Preheat over to 450.

  4. Next, unwrap the cake pans. Poke dimples into the focaccia with your fingers or a rod. Take 1 tablespoon of olive oil, and sprinkle in the No. 12 Greek Spice Blend. Warm this in the microwave to infuse the oil with the flavor. Next, drizzle this warmed-up spice blend over the focaccia.

  5. Place the cake pans in the middle of the oven. Turn the heat down to 425 degrees and bake for 24 – 28 minutes.

  6. Once done, remove from the pans and cool on a track.

Open is to add cheese on top a few minutes before it is completely baked.
