A great burger starts with quality beef and restraint. No fillers. No breadcrumbs. No bottled dressing. Just properly handled ground beef, Bountiful Bahia Seasoning, and a few fresh toppings. Ingredients
For the Burgers
1¼ pounds ground beef, 80/20 preferred (567 g)
2 tablespoons Bountiful Bahia Seasoning (18 g)
6 sesame seed buns (450 g)
For the Bahia Onions
2 tablespoons butter (30 ml/28 g)
1 large sweet onion, thinly sliced (225 g)
1 teaspoon Bountiful Bahia Seasoning (3 g)
For Serving
6 lettuce leaves (30 g)
2 large tomatoes, sliced (300 g)
1 red onion, thinly sliced (120 g)
Method
Prepare the Patties
Place ground beef in a large mixing bowl.
Sprinkle Bountiful Bahia Seasoning evenly over the meat.
Using your fingertips, gently fold the seasoning into the beef.
Handle the meat as little as possible.
Overworking ground beef creates dense, tough burgers.
Divide into six equal portions.
Form each portion into a patty approximately ¾-inch thick.
Press a shallow thumbprint into the center of each patty.
Cover and refrigerate for 20 to 30 minutes while preparing the grill.
Bloom the Seasoning
Melt butter in a skillet over low heat.
Add 1 teaspoon Bountiful Bahia Seasoning.
Stir continuously for 30 seconds until fragrant.
Prepare the Onions
Add sliced onions to the skillet.
Cook over medium heat for 12 to 15 minutes until softened and lightly caramelized.
Remove from heat and keep warm.
Grill the Burgers
Preheat grill to medium-high heat.
Place patties on the grill.
Cook approximately 4 to 5 minutes per side for medium doneness.
Do not press the burgers while cooking.
Pressing forces flavorful juices into the fire rather than keeping them in the burger.
Remove from grill and rest for 3 to 5 minutes.
Assemble
Place lettuce on the bottom bun.
Add a burger patty.
Top with tomato slices and red onion rings.
Spoon caramelized Bahia onions over the burger.
Add the top bun and serve immediately.
