Chicken Fricassee with La Spezia Seasoning


  • 4 chicken breasts or thighs, skinless and boneless

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 1 cup Peas

  • 1 cup chicken broth

  • 1/2 cup white wine (optional)

  • 1/2 cup heavy cream

  • 2 tablespoons La Spezia seasoning

  • Fresh parsley, chopped

  • Salt and pepper to taste


  1. Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides. Remove the chicken and set aside.

  2. Sauté the Vegetables: In the same skillet, add the onions and cook until translucent. Add the garlic, peas and mushrooms, and cook until done.

  3. Prepare the Sauce: Add the chicken broth and white wine (if using) to the skillet, scraping up any browned bits from the bottom. Return the chicken to the skillet, cover, and simmer for about 20 minutes, or until the chicken is cooked through.

  4. Finish the Dish: Stir in the heavy cream and La Spezia seasoning, and heat through, but do not boil. Season with salt and pepper to taste. Garnish with fresh parsley.
