Corn Ribs, or: When Corn Decides to Be the Star

Some dishes are born from tradition.

Others are born because someone looked at an ingredient and thought, what if we did something just a little bit wild with you?


Corn ribs fall squarely into the second category.


Last night in the cottage, corn on the cob took a sharp turn away from butter and salt and found itself cut into ribs, briefly shows its heat, and then lowered into hot oil until it curled, crisped, and turned deeply golden. What came out was something both familiar and surprising—sweet corn with edges that crackle when you bite them.


A generous dusting of Cowboy Crunch brought warmth, smoke, and a little swagger. But what made the plate truly unforgettable was the simplest thing on the table: sour cream stirred with Wilde Garlek.


Cool, creamy, and deeply savory, the dip softened the heat, leaned into the garlic, and pulled everything together. One rib led to another. Plates emptied quickly. Silence fell—the good kind, the kind that only happens when people are happy and busy eating.


This is cottage food at its best.

Corn Ribs with Cowboy Crunch & Wilde Garlek Dip

Serves: 4

Time: ~25 minutes

Vibe: Crispy, savory, addictive


Ingredients

Corn Ribs

  • 4 ears fresh corn, husked

  • Neutral oil, for frying

  • Cowboy Crunch seasoning, to taste


Wilde Garlek Dip

  • 1 cup full-fat sour cream

  • 1½–2 tsp Wilde Garlek seasoning


Instructions

  1. Cut each ear of corn lengthwise into 8 wedges (corn ribs).

  2. Parboil corn ribs in salted water for 3–4 minutes. Drain and let steam-dry.

  3. Heat oil to 350°F.

  4. Fry corn ribs in batches for 4–5 minutes, until golden and curled at the edges.

  5. Drain briefly, then season generously with Cowboy Crunch while hot.

  6. Stir Wilde Garlek into sour cream until smooth. Let rest 10–15 minutes if time allows.

  7. Serve hot with dipping sauce. Expect silence at the table.
