Easy Beef Enchiladas - Taco Tuesday

  • 1/2 lb lean ground beef

  • 1 can (10 oz) mild enchilada sauce

  • 3/4 cup black bean and corn salsa

  • 1 cup shredded Mexican four-cheese blend (4 oz)

  • 1 tablespoon No. 8 Taco Tuesday spice blend

  • 4 flour tortillas for burritos (8 inch)

  • Jalapenos to taste (optional)

  • Chopped fresh cilantro (optional)

  • Salt and pepper to taste

Instructions:

  1. Heat over to 350 deg. Spray an 8-inch square (2-quart) baking dish with cooking spray

  2. In a 10-inch skillet, cook ground beef over medium heat 5 to 7 minutes, stirring frequently, until no longer pink. Add in Taco Tuesday spice blend, cook for 1 minute; drain.

  3. In a medium bowl, mix cooked beef with spices, 1/4 cup of the enchilada sauce, the salsa, and 1/2 of the cheese.

  4. Divide the beef mixture evenly among the tortillas. Wrap tortillas around filling; place seam side down in baking dish.

  5. Pour remaining enchilada sauce over tortillas, and top with remaining 1/2 cup cheese. Cover the baking dish with foil. Bake for 35 to 40 minutes or until thoroughly heated.

  6. Taste and adjust the seasoning with salt and pepper if needed. Add Jalapenos and cilantro if desired.
