Merit's Pantry — New Kingdom Egypt, c. 1400 BCE An Egyptian Kitchen, Sealed and Reopened

In a museum in Turin sits a small lidded basket woven from plant fiber. Inside are cumin seeds. Not the chemical trace of cumin, not an impression left in pottery, Cumin!

The basket came from the Tomb of Kha and Merit at Deir el-Medina, the community on the west bank of the Nile whose inhabitants included the skilled craftspeople responsible for creating Egypt's royal tombs. Sealed in the 18th Dynasty and discovered intact in 1906, TT8 preserved an extraordinary collection of furniture, clothing, tools, vessels, personal belongings, and foodstuffs belonging to Kha and his wife, Merit. Among them were aromatic ingredients that would look remarkably familiar in a kitchen today. The Museo Egizio catalogs cumin, juniper, tarragon, and coriander among the spices preserved in baskets from the tomb. Onions were kept in a bowl. Garlic survived in bunches. There were blocks of salt, and even a large block of fat that the museum suggests probably served, among other purposes, as cooking fat and for preserving food.

And then there is that cumin. Archaeobotanical study of the food remains from the tomb describes the covered basket as still emitting its smell, roughly thirty-four centuries after it was sealed away.


Her cumin still smells like cumin. It still isn't telling.


Because knowing an ingredient survived is not the same thing as knowing what someone did with it. That gap between ingredient and flavor is where this story begins.

Stepping Into Merit's World, c. 1400 BCE

The world of Kha and Merit belonged to one of the most remarkable periods in Egyptian history. The 18th Dynasty, spanning roughly 1550 to 1292 BCE, was marked by enormous political, social, religious, and artistic change.


It is also the world at the center of Maverick Kings: Three Visionary Pharaohs of Egypt's Golden Age, an exhibition at the Museum of Fine Arts, Boston. The show focuses on Hatshepsut, Amenhotep III, and Akhenaten, three rulers from the same family who understood the power of images and used art and architecture in strikingly different ways to advance their reigns. Hatshepsut helped establish the artistic style of the dynasty through temples, statues, and obelisks bearing her royal image. Amenhotep III presided over one of Egypt's most prosperous reigns and commissioned monumental works on an extraordinary scale. Akhenaten disrupted long-established religious and artistic conventions so dramatically that the visual language of his reign remains recognizable thousands of years later.


The exhibition made us think about transformation. Each of these rulers transformed the visual language of their world, and we became curious about a much quieter transformation happening within that same dynasty: how did ingredients become flavor?


Beyond the temples and monuments, grain was being ground and bread was being baked. Beer and wine were being made. Seeds and aromatic plants were being crushed. Foods were dried, preserved, fermented, heated, and combined. None of these transformations commanded a monument. The knowledge behind them lived instead in hands, memory, repetition, smell, taste, and experience, and that kind of knowledge is much harder to excavate.

What Was Actually in the Pantry?

This is where historical restraint becomes important. We do not have Merit's kitchen preserved exactly as she used it in life, and the contents of a tomb should not simply be treated as a grocery list. TT8 was a funerary assemblage, prepared for the afterlife, and its contents have to be understood in that context.


What we do have is something extraordinary: actual foodstuffs and aromatic materials from the world Merit and Kha inhabited. The Museo Egizio identifies cumin, coriander, juniper, tarragon, onions, garlic, salt, and fat among the materials preserved from the tomb and dates the cumin basket itself to 1425–1353 BCE, placing it squarely within the 18th Dynasty.


That evidence tells us these materials were present. It does not give us Merit's recipes. It does not tell us which ingredients she combined, whether she preferred cumin whole or crushed, whether coriander entered one preparation early and another late, whether an aromatic was heated in fat, or whether an ingredient preserved in the tomb had exactly the same culinary role in life that we might instinctively assign to it today.


An inventory is not a recipe. And an ingredient is not yet a flavor.

They Had the Tools. Did They Use Them?

At some point in this research, one question became impossible to ignore.


Thirty-five hundred years ago, Egyptian cooks had heat. They had vessels capable of being heated. They had fats. They had aromatic seeds and plants and tools for crushing and grinding. In other words, they possessed the basic technological pieces necessary to do something many cooks around the world still do today: warm aromatics in fat so their expression changes. Today we often call that blooming.


So did cooks in New Kingdom Egypt bloom their seasonings?


We don't know. And that answer matters. The presence of fat, cumin, coriander, a heated vessel, and grinding equipment can establish that a particular culinary transformation was technologically possible. It cannot establish that a particular cook actually performed that sequence.


There is a very easy way to understand the problem. Look around your own kitchen. You probably have a skillet and oil or butter or another cooking fat. You have heat. You have spices. Perhaps you even own a mortar and pestle. You have everything necessary to bloom a seasoning.


But do you? Maybe you do. Maybe you have never done it in your life.


Imagine an archaeologist thirty-five hundred years from now excavating your kitchen. Your possession of the equipment would tell that archaeologist something about what you could have done. It would not tell them what you did.


Possibility is not evidence of practice. It may be one of the most tempting traps in food history, precisely because it is baited with common sense.

The Loaf That Changed the Question

If the tomb cannot tell us exactly how Merit cooked, we have to widen the investigation. This is where the archaeobotanist Delwen Samuel's work on ancient Egyptian bread becomes especially useful.


Samuel examined surviving bread from New Kingdom Egypt microscopically and used experimental archaeology to investigate how ancient grain had been processed before it became bread. What emerged was considerably more complicated than a simple ingredient list. Emmer, the grain used for most of the loaves she studied, could reach the bread through different processing pathways. Her work described bread made from untreated raw emmer, from emmer that had been germinated and air-dried before milling, and from germinated emmer that had been roasted before milling. Her examination of surviving loaves also identified occasional additions, including fig, date, and coriander.


Think about that for a moment. Two museum labels might both read "Emmer Bread." The ingredient sounds identical. The history of that ingredient may not have been. One grain might have moved relatively directly toward milling. Another might have germinated, undergone biochemical changes, been roasted, milled, worked into dough, and finally baked. The ingredient is still emmer, but the ingredient has been transformed.


That changes the question. Rather than asking only which ingredients ancient Egyptians used, we need to ask something much more interesting: what happened to those ingredients before somebody ate them?

The Ingredient Is Not the Flavor

You can test the idea without an archaeological laboratory. Take a few whole coriander seeds from your spice cabinet and smell them. Now crush them and smell again.


Nothing new has been added. It is still coriander. But it does not present itself to your nose in quite the same way. By breaking the seed, you changed its physical structure and increased access to aromatic compounds that had been protected within it. You changed the sensory experience without changing the name of the ingredient.


And that is only one transformation. Water changes how dried ingredients behave. Fat dissolves and carries some aromatic compounds differently than water does. Heat creates another set of changes. Grinding alters surface area. Fermentation transforms raw material through microbial activity, and roasting changes aroma and taste through heat-driven reactions. Time matters. Sequence matters. Even the moment an ingredient enters a dish matters.


The ingredient list cannot tell you any of that. Which means the flavor was never sitting passively in the ingredients, waiting to be discovered. Someone had to build it.

Imagine Merit's Pantry

Now we can break our own rule for a moment, not archaeologically, but imaginatively.


Imagine that you have been transported back roughly thirty-five hundred years and set down in Merit's world. Before you are ingredients you recognize. There is no cookbook waiting for you, no measuring spoon, no oven dial, and no recipe card telling you what belongs together or which ingredient enters the vessel first. But there is cumin, coriander, onion, garlic, salt, and fat, along with grains, fruits, breads, beverages, and the other foods of the world around you.


What would you make?


Don't rush past the question. Really answer it.


Perhaps you imagined bread. Maybe you crushed the cumin, or combined onion and garlic, or reached instinctively for the fat because you already know what happens when aromatics meet heat.


Whatever you imagined, something fascinating just happened. You introduced another ingredient into Merit's world: yourself.


Your palate came with you. So did your cooking experience, your assumptions about what cumin is "for," your instinct about which ingredients should be ground and which should remain whole, your understanding of what happens when garlic meets warm fat, and your ideas about which flavors belong together. Perhaps something your mother or grandmother taught you came along, or something from a chef, a cookbook, a neighbor, a restaurant, or the internet.


None of that was sitting in her basket. The ingredients may be ancient. The meal you imagined is yours.


And suddenly the difficulty of reconstructing ancient flavor becomes very clear.

How New Kingdom Ingredients Became Flavor

We cannot write Merit's recipes for her, but the archaeological evidence does allow us to see something of the technological world in which ancient Egyptian food was transformed. Grain could be germinated, dried, roasted, and milled. Bread could be mixed and baked. Beer required its own transformations of grain, water, fermentation, and time. Seeds could be crushed or ground, foods could be dried and preserved, fat could be used in cooking, and heat could transform raw ingredients.


None of those facts gives us permission to assemble them into a convenient modern recipe and call it ancient Egyptian cuisine. But together they reveal something more useful: flavor was not merely an inventory. It was a process.


A cumin seed could remain whole or be broken. A grain could be untreated or germinated. Germinated grain could be dried or roasted. The same ingredient could arrive at the finished food carrying a very different history depending on what happened to it along the way, and that history is part of the flavor.


At Oak City Spice Blends, we call this way of thinking "flavor architecture." The phrase is modern; the principle is not. Flavor is built through relationships: ingredient with technique, aroma with medium, heat with time, grinding with surface area, sequence with extraction, and finally all of those things with the judgment of the cook.


The ingredient gives us vocabulary. The technique begins turning it into a sentence.

From Her Pantry to Ours

Once the tomb inventories, the archaeobotanical studies, and the bread research were set aside, we were left with a practical problem: how do you invite a modern cook into this history without pretending to reconstruct a recipe that did not survive?


The answer was not to invent "Merit's seasoning." It was to build a modern seasoning that could carry the question into a modern kitchen. We called it Merit's Pantry.


Merit's Pantry is not Merit's recipe. We have no recipe from her, and we do not claim to have recovered one. Instead, the blend begins with the remarkable evidence preserved from her world. Cumin, coriander, onion, garlic, and salt all have direct connections to the Kha and Merit assemblage documented by the Museo Egizio. Nigella belongs to the broader historical research behind the blend rather than to the specific evidence from TT8.


The proportions are ours. The balance is ours. The final seasoning was deliberately created for a modern kitchen. Her world inspired the ingredients; our kitchen determined the proportions. An interpretation, not a reconstruction.


But a historically interesting seasoning that does not make delicious food is merely an interesting seasoning. So we took it to the stove.

Notes from the Spicekeeper: Smell First

Before you cook with Merit's Pantry, open the jar and smell it. Don't immediately worry about identifying every ingredient; just notice what reaches you first. Now place a small amount in your palm, rub it gently between your fingers, and smell again. Already, you have changed something.


When you cook with it, pay attention to the transformation rather than simply following the clock. When Merit's Pantry enters warm fat, the aroma will begin to shift. Coriander and cumin become more expressive. The dried alliums soften into the background. The seasoning begins to smell less like something from a jar and more like something becoming dinner.

Cook the History: Warm Chickpeas with Lemon & Merit's Pantry

This is not an ancient Egyptian recipe. It is a modern kitchen experiment built around the central question of this article: what happens when the same seasoning is treated differently?


The recipe uses Merit's Pantry twice. Most of the blend is briefly bloomed in olive oil, allowing the warm fat to carry its aromatic character through the chickpeas. A smaller portion enters near the end, where it remains brighter and more immediate. Same seasoning, different sequence, different expression.


Bloom Classification: Gentle + Olive Oil


Why the bloom works. Merit's Pantry contains dried onion, garlic, coriander, cumin, nigella, and salt. Briefly warming most of the blend in olive oil helps release and carry aromatic compounds from the spices while beginning to soften the dried onion and garlic. Holding back a smaller amount until the end gives the finished dish another aromatic layer. The technique lets you experience one of the central ideas behind flavor architecture: when an ingredient enters a dish, it can matter almost as much as which ingredient enters it.

Ingredients

  • 2 tablespoons olive oil (30 ml)

  • 1 small yellow onion, finely chopped, about 1 cup (150 g)

  • 2 teaspoons Merit's Pantry, divided, about 6 g

  • 2 cans chickpeas, 15 ounces each (425 g each), drained and rinsed

  • ⅓ cup water (80 ml)

  • 1 tablespoon fresh lemon juice (15 ml)

  • 2 tablespoons chopped fresh parsley, optional (8 g)


Method

  1. Soften the onion. Warm the olive oil in a large skillet over medium-low heat. Add the onion and cook gently for 5 to 7 minutes, until softened but not deeply browned.

  2. Bloom the seasoning. Reduce the heat to low. Add 1½ teaspoons of Merit's Pantry and stir continuously for about 20 to 30 seconds. Watch the heat carefully, you are not trying to toast the dried onion or garlic. Stop when the aroma noticeably rises. That is the light ding of the bell.

  3. Build the dish. Add the chickpeas and water and stir well, coating the chickpeas with the seasoned oil. Simmer gently for about 5 minutes until the chickpeas are hot and the liquid has reduced slightly.

  4. Finish with brightness. Remove the skillet from the heat and stir in the lemon juice.

  5. Add the second expression. Sprinkle in the remaining ½ teaspoon of Merit's Pantry and toss gently. Add the parsley, if using.

  6. Taste before adjusting. Give the seasoning a moment to settle into the warm chickpeas, then taste before adding anything else.


Best with. Serve the chickpeas with warm flatbread, roasted vegetables, greens, eggs, or a spoonful of plain yogurt. They also make an easy base for a grain bowl.


Blooming notes. This recipe is really two experiments in one. The first portion of Merit's Pantry meets warm fat and then cooks with the chickpeas; the second portion enters after the heat has been turned off. Taste carefully. Can you detect the difference between the deeper seasoning that traveled through the cooking process and the brighter aromatic notes added at the finish? Neither is automatically better; that is not the lesson. The lesson is the sequence: fat, then aromatics, then chickpeas, then a gentle simmer, then acid, then finishing seasoning.


The seasoning gives us the vocabulary. Cooking turns it into a sentence.

Try the Three-Way Experiment

If you want to take the question further, try Merit's Pantry three ways before your next meal.


Place ½ teaspoon (about 1.5 g) of the seasoning into each of three small dishes. Leave the first dry. Moisten the second with just enough warm water to hydrate it, and let it rest for several minutes. Briefly warm the third in a teaspoon or two of olive oil over low heat, stopping at the light ding of the bell.


Now smell all three. Same seasoning, same proportions, different treatment.


Which seems brighter? Which seems rounder? Where do you notice the coriander? Does the cumin seem different? What happens to the onion and garlic?


There is no answer key. The point is to notice, because now you are doing the very thing the archaeological record cannot do for us. You are experiencing the transformation as it happens.

Through the Kitchen Door

Return to Merit's world. To Deir el-Medina, where Kha worked among the people responsible for creating royal tombs during the 18th Dynasty. To TT8, where objects prepared for the afterlife remained sealed together until their discovery in 1906. To baskets of aromatic seeds, onions in a bowl, bunches of garlic, blocks of salt, food, vessels, furniture, linens, and the extraordinary material remains of two lives.


The evidence lets us stand remarkably close. We can identify cumin. We can identify coriander. We can see bread. We can study grain under a microscope and discover that the apparently simple word "emmer" can conceal a history of germination, drying, roasting, milling, and baking. We can demonstrate in our own kitchens that crushing a seed changes what we smell and that warming aromatics in fat changes how they present themselves.


What we cannot do is cross the final distance. We cannot stand beside Merit while she cooks. We cannot watch her hands. We cannot ask what she crushed, what she left whole, what she heated, what she combined, or what aroma told her that something was ready. We cannot recover everything she learned from the people who taught her.


The responsible historian has to leave some doors closed. But perhaps that is exactly why the surviving cumin is so compelling. After more than three thousand years, the seed can still tell us what it is. It cannot tell us everything it became.


Merit keeps her secrets. Her cumin still smells like cumin.

It still isn't telling.

Where we invite you to imagine entering Merit's pantry, we are deliberately moving into an imaginative exercise, not claiming that TT8 preserved a working kitchen exactly as Merit left it in life. The recipe and the seasoning are modern culinary interpretations, invitations to experiment with the evidence, not claims to have recovered a lost recipe.

And for something genuinely strange and wonderful, Jacopo La Nasa and colleagues' 2022 study, “Archaeology of the Invisible: The Scent of Kha and Merit”, used non-destructive mass spectrometry to analyze volatile compounds emitted by organic materials preserved in vessels from TT8. The research investigated roughly 50 vessels without requiring the objects to be opened or destructively sampled.


On New Kingdom bread and grain processing. Delwen Samuel's doctoral thesis at the University of Cambridge, An Archaeological Study of Baking and Bread in New Kingdom Egypt (1994), is foundational to the discussion of processing in this article. Samuel combined archaeological evidence, microscopy of surviving bread, and experimental work to investigate what happened to grain before it became food. The complete thesis is freely available through Cambridge's institutional repository.


For a much shorter introduction to Samuel's findings, see her 1996 Science paper, “Investigation of Ancient Egyptian Baking and Brewing Methods by Correlative Microscopy”. Her microscopy demonstrated that ancient Egyptian breadmaking and brewing involved considerably more complex grain processing than ingredient lists or artistic representations alone might suggest.


On nigella. Daniel Zohary, Maria Hopf, and Ehud Weiss's Domestication of Plants in the Old World is an important reference for the archaeological history and distribution of Old World cultivated plants. The archaeological record for Nigella sativa in ancient Egypt exists, but its precise role and culinary use should not be assumed from the presence of seeds alone. That distinction is why we treat nigella as part of the broader historical research behind Merit’s Pantry rather than as an ingredient specifically documented in the Kha and Merit assemblage.
