Michel's Italian Style Meat Loaf

TOTAL TIME: Prep: 15 min. Bake: 1 hour + standing. YIELD: 6 servings.


  • 2 large eggs, lightly beaten

  • 3/4 cup 2% milk

  • 2/3 cup finely crushed saltines

  • 1/2 cup chopped onion

  • 1-1/2 teaspoons Michel's Meatball Seasoning

  • 1-1/2 pounds lean ground beef (90% lean)

  • 1 cup ketchup

  • 1/2 cup packed brown sugar

  • 1 teaspoon Worcestershire sauce


  1. Preheat the oven to 350°F (175°C). In a large bowl, mix together the eggs, milk, crushed saltines, chopped onion, and Michel's Meatball Seasoning. Add the ground beef to the bowl and blend everything together lightly but thoroughly. Form the mixture into an 8x4-inch loaf and place it in an ungreased 15x10x1-inch baking pan.

  2. For the glaze, whisk together the ketchup, brown sugar, and Worcestershire sauce in a small bowl until the sugar is fully dissolved. Reserve 1/2 cup of this mixture for serving, and spread the rest over the top of the meatloaf.

  3. Bake the meatloaf for 60-65 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C). Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve it with the reserved sauce on the side.
