Gentle Bloom | Sweet, Savory, and Aromatic

Serves 4

Ingredients

  • 1 cup glutinous rice (sticky rice) (200 g)

  • 1 can coconut milk (14 ounces / 400 ml)

  • ¼ cup brown sugar (50 g)

  • 1 tablespoon Oak City Spice Blends Lu Bao (8 g)

  • ¼ teaspoon sea salt (1.5 g)

  • 1 ripe mango, peeled and diced (200–250 g)

  • 1 teaspoon sesame seeds (3 g), for garnish


Method

  1. Rinse the Rice

    1. Place the glutinous rice in a bowl and rinse several times under cold water until the water becomes mostly clear.

    2. Drain well.

  2. Build the Coconut Base

    1. In a medium saucepan, combine:

      1. coconut milk

      2. brown sugar

      3. Lu Bao seasoning

      4. sea salt

    2. Warm gently over low heat for 2–3 minutes, stirring frequently.

    3. Do not boil.

  3. Gentle Bloom the Spice

    1. As the coconut mixture warms, the sesame, ginger, garlic, pepper, and chives from the Lu Bao seasoning will begin releasing aroma into the coconut fat.

    2. This is a gentle bloom designed to soften the savory edges of the blend while preserving the sweetness of the coconut and mango.

  4. Cook the Rice

    1. Add the rinsed sticky rice to the saucepan and stir gently.

    2. Bring to a light simmer over medium-low heat.

    3. Cover and cook for 15–20 minutes, stirring occasionally to prevent sticking, until the rice becomes tender and creamy.

  5. Rest

    1. Remove from heat and let stand for 5 minutes.

  6. Serve

    1. Spoon sticky rice into bowls and top with diced mango and sesame seeds.

  7. Optional: drizzle with additional warm coconut milk before serving.

  8. Serve warm or at room temperature.


Why the Blooming Works

Gentle Bloom

This recipe uses a gentle bloom, where the seasoning is warmed slowly in coconut milk rather than aggressively toasted in oil.


Coconut milk contains natural fat that carries the aromatic compounds found in ginger, garlic, sesame, black pepper, and chives. Gentle heat allows these flavors to soften and infuse the rice without becoming bitter or overpowering.


Because Lu Bao also contains brown sugar and sesame, the seasoning develops a warm, almost toasted character as it cooks into the sticky rice.


The result is a layered dish that balances the following:

  • creamy coconut

  • savory sesame

For additional texture and contrast, finish with:

  • toasted coconut flakes

  • crushed peanuts
