Peruvian Sun Zesty Lime and Chili Roasted Vegetables

  • 1 zucchini, sliced

  • 1 bell pepper, cut into strips

  • 1 red onion, sliced

  • 1 cup cherry tomatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste


  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, toss all the vegetables with olive oil and Peruvian Sun seasoning.

  3. Spread the vegetables evenly on a baking sheet.

  4. Roast for 20-25 minutes or until vegetables are tender and slightly charred.

  5. Season with salt to taste and serve warm.

Serving Suggestions:

Great as a side dish or can be added to tacos, salads, or rice bowls.
