Peruvian Sun Zesty Lime and Chili Roasted Vegetables
1 zucchini, sliced
1 bell pepper, cut into strips
1 red onion, sliced
1 cup cherry tomatoes
2 tablespoons olive oil
1 tablespoon Peruvian Sun (Chile Lime Seasoning)
Salt and pepper to taste
Preheat your oven to 400°F (200°C).
In a large bowl, toss all the vegetables with olive oil and Peruvian Sun seasoning.
Spread the vegetables evenly on a baking sheet.
Roast for 20-25 minutes or until vegetables are tender and slightly charred.
Season with salt to taste and serve warm.
Great as a side dish or can be added to tacos, salads, or rice bowls.
