Root Vegetable Stew
2 Parsnips, peeled and diced
2 Carrots, peeled and diced
2 Turnips, peeled and diced
1 Onion, finely chopped
2 cloves Garlic, minced
2 tablespoons Unsalted Butter
4 cups Chicken or Vegetable broth
1 tablespoon No. 75 Barazki Zopa Spice Blend
Sea Salt and Pepper, to taste
In a large pot, melt the butter over medium heat.
Add the finely chopped onion and minced garlic to the pot and sauté until soft and translucent, about 5 minutes.
Add the diced parsnips, carrots, and turnips to the pot and sauté for another 5-10 minutes.
Add the broth and No. 75 Barazki Zopa Spice Blend, and bring to a boil.
Reduce the heat and simmer the stew for 30-40 minutes, or until the vegetables are tender.
Serve the stew hot, garnished with chopped fresh herbs if desired.
