There are some spice blends that shout for attention, and then there are blends that quietly unfold in the steam rising from a cup or bowl. Sweet Yemeni belongs to the second category. Inspired by the coffee houses, spice caravans, and perfumed desserts of the Arabian trade world, this blend layers cardamom, ginger, cinnamon, orange peel, mace, nutmeg, and clove into something soft, warm, and deeply aromatic. In this blog, we explore two comforting recipes that reveal how gentle blooming in warm milk and honey transforms Sweet Yemeni from a simple spice blend into an experience. From creamy Orange Blossom Rice Pudding to fragrant Honey Milk Tea, these dishes highlight the quieter side of spice, where warmth, citrus, and floral notes linger long after the last spoonful or sip.

Orange Blossom Rice Pudding with Sweet Yemeni
Silky, floral, and warmly spiced with orange, cardamom, and cream.
Bloom Classification: Gentle Bloom with Cream Bloom
Why the Bloom Works: Sweet Yemeni is gently warmed in cream near the end of cooking rather than aggressively fried. This soft bloom awakens the cardamom, ginger, and orange peel without allowing the cinnamon or clove to dominate the pudding. The result is aromatic rather than heavy, allowing the floral orange blossom water and creamy rice to remain the heart of the dish.
Ingredients
1 cup Arborio or other short-grain rice (200 g)
2 cups water (475 ml)
1/2 cup granulated sugar (100 g)
3 cups whole milk (720 ml)
1/4 teaspoon sea salt (1.5 g)
1 tablespoon orange zest, finely julienned (6 g)
1/2 cup light cream (120 ml)
3/4 teaspoon Oak City Spice Blends Sweet Yemeni seasoning, finely ground (2 g)
1/2 teaspoon vanilla extract (2.5 ml)
2 teaspoons orange blossom water (10 ml)
Optional Garnishes
Orange blossom honey
Ground cinnamon
Chopped pistachios
Toasted almonds
Candied orange peel
Method
In a medium saucepan, combine the rice and water. Bring to a simmer over medium heat. Cover and cook for 15–20 minutes, or until the water has been absorbed.
Add the sugar, milk, salt, and orange zest to the cooked rice. Stir gently and bring the mixture to a low simmer.
Cook uncovered over low heat for 25–30 minutes, stirring frequently, especially toward the end of cooking, until the pudding becomes thick and creamy.
In a small saucepan or microwave-safe bowl, gently warm the cream until just warm to the touch. Stir in the Sweet Yemeni seasoning and allow it to sit for 1 minute. This creates the Gentle Cream Bloom.
Remove the rice pudding from the heat. Stir in the bloomed cream mixture, vanilla extract, and orange blossom water.
Allow the pudding to cool slightly, stirring occasionally as it thickens further.
Spoon into serving dishes and garnish as desired with orange blossom honey, pistachios, toasted almonds, candied orange peel, or a light dusting of cinnamon.

Blooming Notes
Sweet Yemeni should be added late in the process to preserve its aromatic citrus and floral notes.
Avoid boiling the spice blend directly in the milk for long periods, which can flatten the brighter orange and cardamom tones.
Orange blossom water should always be added off heat to preserve its delicate perfume.
Sweet Yemeni Honey Milk Tea
A warm, aromatic tea with cardamom, orange peel, ginger, and honey.
Bloom Classification: Gentle Bloom with Honey & Milk Bloom
Why the Bloom Works: Sweet Yemeni is gently warmed in honey and milk rather than boiled directly in water. The fat in the milk softens the sharper spice edges while the honey helps carry the volatile citrus and cardamom aromas upward with the steam. This creates a softer, perfumed cup where the spices feel woven into the tea rather than sitting on top of it.
Ingredients
2 cups water (475 ml)
2 black tea bags, preferably Assam or Ceylon
1/2 cup whole milk (120 ml)
1 tablespoon honey (21 g)
3/4 teaspoon Oak City Spice Blends Sweet Yemeni seasoning (2 g)
1/4 teaspoon vanilla extract (1 ml), optional
Orange peel or cinnamon stick for garnish, optional
Method
Bring the water to a gentle boil in a small saucepan or kettle.
Add the tea bags to two mugs or a teapot and pour the hot water over them. Steep for 4–5 minutes, depending on desired strength.
While the tea steeps, combine the milk, honey, and Sweet Yemeni seasoning in a small saucepan over low heat.
Warm gently for 2–3 minutes, stirring frequently. Do not boil. The mixture should become fragrant and lightly steamy. This creates the Gentle Honey & Milk Bloom.
Remove the tea bags from the brewed tea.
Stir the warm bloomed milk mixture into the tea. Add vanilla extract if using.
Serve immediately with a small strip of orange peel or a cinnamon stick if desired.
Best With
Butter cookies
Pistachio pastries
Toast with orange marmalade
Semolina cakes
Rice pudding
Quiet evenings and rainy afternoons
Blooming Notes
Blooming Sweet Yemeni in milk preserves the softer orange and cardamom notes that can become muted when boiled directly in water.
Honey acts as both a sweetener and an aromatic carrier, helping the spice perfume rise with the steam.
Assam tea creates a deeper, maltier cup, while Ceylon produces a brighter and lighter finish.
