2 medium-sized tortillas (corn or flour, based on your preference)
2 large eggs
1 teaspoon of either Taco Tuesday (Savory) or Poudre Fine (Sweet)
1-2 tablespoons butter or oil, for frying
Optional: sugar or cinnamon (for a sweet version), or toppings like salsa, cheese, avocado, or sour cream for savory
Prepare the Tortillas: Tear the tortillas into smaller pieces (roughly 2-inch squares or smaller).
Wet the Tortillas: Briefly run warm water over the tortilla pieces until they are damp but not soggy. This step is quicker than with matzo because tortillas can absorb liquid faster. Drain off any excess water.
Mix with Eggs: In a bowl, beat the eggs and add in either Taco Tuesday Spice Blend for the savory version or Poudre Fine for the Sweet version. Add the damp tortilla pieces and stir until they are coated with the egg mixture.
Fry the Tortilla Brei: Heat butter or oil in a skillet over medium heat. Once hot, add the tortilla and egg mixture. Cook, stirring occasionally, until the eggs are fully cooked and the tortilla pieces are slightly crispy. This usually takes about 3-5 minutes.
Serve: For a savory version, top with salsa, cheese, avocado, or sour cream. For a sweet version, sprinkle with sugar or cinnamon or serve with some fruit compote or preserves.
