Yeast-Free Tuscan Schiacciata Recipe

Ingredients:

  • 500 g (4 cups) all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • 300 ml (1 1/4 cups) warm water

  • 3 tbsp extra virgin olive oil (plus more for brushing)

  • 2 tbsp La Spezia seasoning

  • Coarse sea salt

Instructions:

  1. Prepare the Dough:

  • In a large mixing bowl, combine the flour, baking powder, salt, and 1 tablespoon of La Spezia seasoning.

  • Make a well in the center and pour in the warm water and 2 tablespoons of olive oil.

  • Mix the ingredients together until a dough forms. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.

  1. Shape the Schiacciata:

  • Preheat your oven to 220°C (430°F).

  • Transfer the dough to a baking sheet lined with parchment paper or a well-oiled baking tray.

  • Stretch and flatten the dough into a rectangular or oval shape, about 1-2 cm thick.

  1. Prepare for Baking:

  • Use your fingers to make dimples all over the surface of the dough.

  • Brush generously with olive oil, ensuring it gets into the dimples.

  • Sprinkle coarse sea salt and the remaining 1 tablespoon of La Spezia seasoning over the top.

  1. Bake:

  • Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy on the edges.

  1. Cool and Serve:

  • Remove from the oven and let it cool slightly on a wire rack before slicing.

  • Serve warm or at room temperature. This yeast-free schiacciata is perfect on its own, as a sandwich base, or as an accompaniment to soups and salads.
