Broccoli with Umami Fire and Toasted Garlic

Most broccoli recipes rely on garlic and red pepper flakes to create flavor. Umami Fire accomplishes the same goal while adding layers of savory depth that plain crushed peppers cannot provide. The seasoning brings together garlic, heat, and rich umami notes that transform a simple vegetable side dish into something that tastes far more substantial.

Why the Bloom Works

Garlic, peppers, and savory aromatics release their flavor compounds into warm oil. Blooming Umami Fire briefly in olive oil allows those flavors to coat every piece of broccoli rather than sitting on the surface.


Ingredients

  • 2 tablespoons olive oil

  • 6 cups broccoli florets (about 1 large head)

  • 2 teaspoons Umami Fire seasoning

  • 3 cloves garlic, thinly sliced

  • ¼ cup water


Method

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add the Umami Fire seasoning and garlic. Cook 30 seconds, stirring constantly, until fragrant.

  3. Add the broccoli and toss to coat with the seasoned oil.

  4. Cook 2 minutes, stirring frequently.

  5. Add the water, cover, and reduce heat to low.

  6. Steam for 2 to 3 minutes until the broccoli is crisp-tender.

  7. Remove lid and cook another minute if needed to evaporate excess moisture.

  8. Serve immediately.

Blooming Notes

This is a perfect example of how blooming works on vegetables. The seasoning never touches the water. Instead, it blooms in the olive oil first, coating the broccoli before steaming. The result is deeper flavor with less seasoning than simply sprinkling it on at the end.


One small improvement: add 1 teaspoon lemon juice right before serving. The acidity wakes up the umami flavors and makes the broccoli taste brighter and more complete. That little squeeze of lemon is the difference between "good broccoli" and "I should make this again."
