Ingredients
For the Chicken & Broth
2 tablespoons olive oil (30 ml)
1 medium onion (150 g), chopped
3 carrots (180 g), chopped
3 celery stalks (120 g), chopped
1 medium Yukon Gold potato (180 g), diced
1/4 cup all-purpose flour (30 g)
4 cups chicken broth (960 ml)
2 cups cooked chicken, shredded (280 g)
2 teaspoons Imperial Adobo Seasoning (5 g)
1 tablespoon fresh parsley (4 g), chopped
1/4 cup heavy cream (60 ml), optional
For the Dumplings
2 cups all-purpose flour (240 g)
1 tablespoon baking powder (12 g)
1/2 teaspoon salt (3 g)
1 cup milk (240 ml)
1/4 cup butter (57 g), melted
1 teaspoon Imperial Adobo Seasoning (2.5 g)
Method
Heat olive oil in a large Dutch oven or heavy pot over medium heat.
Add the Imperial Adobo Seasoning and bloom for 30 seconds, stirring constantly.
Add onion, carrots, celery, and potato. Cook for 5 to 7 minutes until the vegetables begin to soften.
Sprinkle the flour over the vegetables and cook for 2 minutes while stirring.
Gradually add the chicken broth, stirring constantly to prevent lumps.
Bring the mixture to a gentle simmer.
Add the shredded chicken and simmer for 15 minutes until the vegetables are tender.
While the broth simmers, prepare the dumplings.
In a mixing bowl, whisk together flour, baking powder, and salt.
Stir the Imperial Adobo Seasoning into the melted butter.
Add the milk and butter mixture to the dry ingredients and stir just until a soft dough forms. Do not overmix.
Stir the parsley and optional cream into the broth.
Drop spoonfuls of dumpling dough onto the simmering broth.
Cover tightly and cook for 15 minutes without lifting the lid.
Test a dumpling by cutting it open. The center should be fully cooked and fluffy.
Serve hot.
If Something Goes Wrong
Dumplings Are Dense
The dough was overmixed. Stir only until the ingredients are combined.
Dumplings Are Raw Inside
Keep the lid closed during cooking and allow the full 15 minutes.
Broth Is Too Thick
Add additional chicken broth, 1/4 cup (60 ml) at a time.
Broth Is Too Thin
Simmer uncovered for several minutes before adding the dumplings.
Flavor Seems Flat
Add an additional 1/2 teaspoon Imperial Adobo Seasoning and adjust salt to taste.
