Roasted Vegetables - Oda Mae

Roasted Vegetables

  • 1 lb (450 g) mixed vegetables (such as carrots, bell peppers, zucchini, and onion)

  • 2 tablespoons Oda Mae spice blend

  • 2 tablespoons olive oil

  • Salt, to taste


  1. Preheat oven to 400°F (200°C).

  2. Cut vegetables into bite-sized pieces and place them in a large bowl.

  3. In a small bowl, mix Oda Mae spice blend with olive oil to make a paste.

  4. Pour the spice paste over the vegetables and toss to coat evenly.

  5. Season with salt to taste.

  6. Spread vegetables out in a single layer on a baking sheet.

  7. Roast for 20-25 minutes, or until vegetables are tender and lightly browned.

  8. You can also grill the vegetables if you prefer.
