Roasted Vegetables
1 lb (450 g) mixed vegetables (such as carrots, bell peppers, zucchini, and onion)
2 tablespoons Oda Mae spice blend
2 tablespoons olive oil
Salt, to taste
Instructions:
Preheat oven to 400°F (200°C).
Cut vegetables into bite-sized pieces and place them in a large bowl.
In a small bowl, mix Oda Mae spice blend with olive oil to make a paste.
Pour the spice paste over the vegetables and toss to coat evenly.
Season with salt to taste.
Spread vegetables out in a single layer on a baking sheet.
Roast for 20-25 minutes, or until vegetables are tender and lightly browned.
You can also grill the vegetables if you prefer.
